Chocolate Chunk Bread Pudding

Adapted from Dessert Express

6 day old small croissants
6 ounces chopped 61% chocolate
2 egg yolks
1/4 cup sugar
2/3 cup half-and-half
1 tablespoon butter, plus more for pans

Preheat over to 350 degrees. Lightly butter four ramekins.  Roughly chop croissants.  In medium bowl, combine yolks, sugar and half-and-half.  Stir in croissants and chocolate.  Spoon mixture into ramekins and dot with butter. Place ramekins in deep dish and fill outer dish with 1-2 inches of water.  Bake until center is set, about 20 minutes.  Serve warm. Makes 4 servings.
