1 tbl Olive Oil
6 Boneless Skinless Chicken Thighs
3 links Chorizo
4 Golden Yukon Potatoes
1/4 cup Diced Onions
1/4 cup Shredded Carrots
Fresh Herbs (Rosemary, Thyme, Oregano, etc)
Salt & Pepper
Heat oven to 400 degrees. Drizzle oil in 13x9 sheet pan. Cut chorizo into thirds. Dice potatoes into medium chunks. Finely chop herbs. Place chicken, chorizo, potatoes, onions and carrots in the pan. Sprinkle with herbs, salt, and pepper. Bake for 50 minutes. Serve with slotted spoon. Makes 3-4 servings.
